A Crème Brûlée That Is To Die For 7.06 Go Bulldogs!

“I hear the crème brûlée is to die for.”


Ingredients:

  • 2 ½ cups heavy cream

  • 2 tsp vanilla bean paste (this can be expensive, so you can use extract)

  • 1 ½ instant coffee granules

  • ½ cup + ⅓ cup (separated) granulated sugar

  • 6 egg yolks beaten

Directions:

  1. Pre-heat oven to 350 degrees F

  2. Add the cream, vanilla, coffee, and ½ cup sugar to a medium saucepan and place over medium-high heat. Stir continuously until the cream reaches a low boil.

  3. Remove the pan from the heat.

  4. Add the egg yolks to a small mixing bowl and add ¼ cup of the hot cream to the eggs and stir to combine. Then add the yolk mixture into the cream mixture a little at a time and stir in between with a whisk to combine. Be sure to take your time with this so the eggs don’t scramble!

  5. Pour the custard mixture through a fine mesh sieve to remove any lumps then pour into small ramekins.

  6. Transfer the ramekins to a large baking dish and carefully add boiling water to the bottom of the baking dish to fill about 2 inches high. Be careful not to splash any water inside of the ramekins.

  7. Bake at 350 F for 30-35 minutes or until the crème brûlée is set but jiggles slightly. Let the baking dish cool for a couple minutes on the counter before removing the ramekins.

  8. Allow the ramekins to cool completely before covering and placing in your fridge to fully set. I recommend chilling overnight for the best results.

  9. When you’re ready to serve, sprinkle a thin layer of the remaining sugar across the top of each crème brûlée.

  10. If you have a kitchen blow torch, use that to caramelize the sugar on top. If you don’t have a kitchen torch, set your oven to broil and place the ramekins on a baking sheet. Broil in the oven for about 3-5 minutes or until the sugar is caramelized. Serve immediately!


Was there any other dish I could make for this episode? Like the pickle episode before, crème brûlée is mentioned so many times, that I just had to do it! As I like to do, I made this dessert coffee-flavored as I know that’s how the Gilmore Girls would enjoy it the most. I’ve been wanting to get a kitchen blow torch for a while now, and this felt like the perfect occasion to finally do so! But don’t worry, I didn’t pull a season 1 Sookie and set anything on fire like at the Chilton Bake Sale.
