“Angel wings with dipping sauce.” “Good, good.” “Oh, did you bring me the picture?” “Oh, yes.” “Too bad you couldn't get your mom to relinquish Friday night.” “No, she has her Vulcan death grip on that one.” “Not that surprising though.”
Ingredients:
For the angel wings:
3 egg yolks
2 tbsp sugar
¼ tsp salt
2 tbsp sour cream
½ tsp almond extract
½ tsp cinnamon
½ tsp lemon zest
½ tsp orange zest
¾ cup all-purpose flour
1 qt vegetable oil for frying
¼ cup powdered sugar
For the chocolate sauce:
½ cup dark chocolate chips
1 tbsp whole milk
Directions:
In a medium bowl, mix together the egg yolks, sugar, and salt until well combined.
Add in the sour cream, almond extract, cinnamon, lemon and orange zest. Mix until combined.
Sift in the flour and combine until a dough forms. It will likely be sticky, so you may need to add a bit more flour.
Add the oil to a large stock pot and place over medium-high heat. Allow to simmer and reach 350 degrees F using a cooking thermometer to check.
While the oil heats, transfer the dough to a lightly floured surface. Roll out until the dough is ⅛ inches thick.
Using a pizza cutter or sharp knife, cut the dough into strips that are 1 inch wide and about 6 inches long.
Cut a slit in the center of each strip then insert one of the ends of the strips through the slit and twist to create a bow-like shape.
Once the oil reaches 350 F, carefully add a few of the angel wings into the hot oil. Fry for about 1 minute on each side and use tongs to flip over. They should be golden brown and crisp.
Carefully remove from the hot oil with a slotted spoon and allow to dry on paper towels. Work in batches to fry the remaining angel wings.
Dust the angel wings with the powdered sugar using a fine mesh sieve.
Prepare the chocolate sauce by adding the chocolate chips and milk to a small bowl and microwave for 30-second intervals until melted.
Recipe adapted from Jenny Can Cook
This was a fun recipe to research! Angel wings are a traditional Polish dessert which is actually where my family originates from, so I enjoyed learning about this recipe. It’s such a light and simple dessert, but you can never go wrong with fried dough in my opinion. I made a slight change to the traditional recipe by swapping vanilla with almond extract and added cinnamon. I think it would be a lovely addition to a Christmas dessert bar or holiday party. I love that Sookie made these for Rory’s birthday party because it’s not something you would really see at a 16-year-old’s birthday party!
Happy cooking from the Hollow!
