“What about the cookies?” “Ooh, the cookies are on the counter. Caramel marshmallow chocolate chunk!”
Ingredients
1 cup unsalted butter
1 cup brown sugar
½ cup white sugar
2 eggs
2 tsp vanilla
2 ½ cups flour
1 tsp baking soda
½ tsp salt
4 oz good quality dark chocolate, roughly chopped
¼ cup caramel chews, roughly chopped
Marshmallow fluff
Caramel syrup
Flaky salt
Directions:
Place a large saucepan over medium heat and add the butter. Don’t touch the butter after it melts.
After a few minutes, the butter will begin to bubble. The butter will then become foamy. Leave it be until it turns a medium brown shade. It should smell nutty.
Set the butter aside and allow to cool for about 10 minutes.
Once the butter has cooled, pour it into a large mixing bowl. Add in both sugars and mix until well combined and smooth.
Add the eggs and vanilla and mix until well combined.
Sift in the dry ingredients: flour, baking soda, and salt.
Fold in half of the chopped chocolate and all of the caramel into the dough.
Chill the dough (I chilled mine for 30 minutes, but you may need to chill yours longer.
Preheat the oven to 350 degrees F.
Scoop out cookies with a double cookie scoop and roll into a smooth ball. Place on a lined baking sheet.
Top the cookies with the remaining chopped chocolate.
Bake at 350 degrees F for 12-15 minutes or until golden brown.
Allow the cookies to cool completely.
Spread about a tablespoon of marshmallow fluff onto each cookie.
Place under the broiler for about 3 minutes or until the marshmallow toasts.
Drizzle with caramel sauce.
Top with flaky salt.

Initially, I was planning on just making these cookies for this episode, but when John Cabrera asked me to make Brian’s cheesecake off the floor, I couldn’t not make that! But I still wanted to make these cookies. Dolly the Food Nerd reached out to me about making a dish for Lauren Graham’s birthday, which happens to be today! And we worked together on creating this recipe. I had so much fun working with her and brainstorming ideas for these cookies. I have become obsessed with baking with browned butter, so be ready to see more dishes featuring it. It creates a nutty flavor and really takes baked goods to the next level. The caramel chews add a nice caramel flavor to these cookies without making the dough too tough to chew. Dolly had the idea of adding marshmallow fluff, and I’m obsessed with how these cookies turned out with it! I have been waiting pretty much since the beginning of this project to get to these cookies, and they have rightfully become one of my favorite things I've ever made!
