Genovia Sorbet- Princess Diaries Bonus Dish

“Between the courses, to cleanse the palate.” “I'm fine. It's cold!” “She didn't realize it was frozen.” “What should we do?” “We should take that much, too.” “Just do the same thing.” “They are acting like monkeys.” “Have you ever experienced that instant headache when you eat ice too quickly?” “No.”

Ingredients: 

• 1 cup granulated sugar

• 1 cup water

• ½ oz fresh mint leaves plus more for garnish

• 4 ripe pears, peeled and diced

• 2 tbsp of lime juice

• 1 tbsp coconut cream

• Green food coloring

Directions: 

1. Place a medium saucepan over high heat and add the sugar and water. Simmer until the sugar dissolves then remove from heat. Add the mint to the saucepan and steep for 20 minutes before straining out the solids. Then let cool completely. 

2. Add the pears to a food processor and blend until smooth. Add the mint syrup, lime juice, coconut cream, and green food coloring to reach your desired color. I find it’s better to gradually add in the color so you don’t overdo it. Blend until smooth. 

3. If you have an ice cream maker, add the mixture to the frozen drum for 15 minutes. Transfer sorbet to a metal loaf tin. Press down a piece of plastic wrap to the top of the sorbet to prevent ice crystals from forming. Allow to firm up in the freezer for at least 1 hour. 

4. If you don’t have an ice cream maker, transfer sorbet to a metal loaf tin and press down a piece of plastic wrap to the top of the sorbet. You will need to hand churn the sorbet every hour with a spoon to create a smooth consistency. You will need to freeze for 4-8 hours or until firm. 

5. Serve your sorbet with a couple leaves of fresh mint for garnish.

This week on Blanket Fort Files, Joy and I talked about the Princess Diaries, so I thought it would be fun to dedicate this week to one of my favorite movies. I attended a Princess Diaries themed party a few weeks ago and made the famous mint and pear sorbet, and it was a hit!

It's very clear in the movie that it's mint sorbet, but of course, I had to also include the famous Genovian pears. You could use any kind of pear you want, but I went with D'Anjou pears. If you want to know why Genovia is famous for pears, you'll need to listen to our episode!
