Lemon Pie 5.20 How Many Kropogs to Cape Cod

“Oh hey, save Rory some lemon pie.”


Ingredients:

For the crust:

  • 2 cups graham cracker crumbs

  • ⅓ cup brown sugar

  • 8 tbsp unsalted butter, melted

For the pie filling:

  • ¾ cup lemon juice

  • 2 14-oz cans sweetened condensed milk

  • 4 egg yolks

  • ½ tbsp lemon zest

  • ½ tsp salt

For the whipped cream:

  • 1 cup heavy cream

  • ¼ cup powdered sugar

  • ½ tsp vanilla extract

  • 1 tsp lemon zest

Directions:

  1. Preheat the oven to 350 degrees F.

  2. Grease a 13-inch pie pan with butter or cooking spray.

  3. Prepare the graham cracker crust by combining the crumbs, brown sugar, and melted butter in a medium mixing bowl.

  4. Transfer the crumb mixture to the prepared baking dish and pack to form a crust.

  5. Bake at 350 F for 10 minutes. Then remove from oven and allow to cool.

  6. While the crust cools, prepare the pie filling by combining the lemon juice and sweetened condensed milk in a large mixing bowl.

  7. Mix in egg yolks one at a time, then add the lemon zest and salt and mix until combined. The mixture should be thick and creamy.

  8. Carefully pour the pie filling into the cooked crust.

  9. Bake for 15-17 minutes at 350 F or until the center jiggles only slightly.

  10. Remove from the oven and allow to cool to room temperature.

  11. Chill in the fridge for at least one hour to fully set.

  12. While the pie chills, prepare the whipped cream by combining the heavy cream, powdered sugar, vanilla, and lemon zest in a medium mixing bowl. Use an electric mixer to whip the cream until soft peaks form. Be careful not to overmix!

  13. Pipe or top the pie with whipped cream before serving.

There's something so good about a graham cracker crust!

So this dish might not be the first thing you think of when you hear the name of the episode. You might not even catch it watching the episode. It’s a quick throwaway line mentioned after a list of food. I was originally going to make Luke’s soft-shell crab amandine for this episode, but I chickened out on using whole crabs. I don’t even think I would be able to find good quality crab near me. I put this episode on to try to unwind my mind before bed, listening for other food to make. When I heard Lorelai mention lemon pie, I was sold!

You're looking for a thick and creamy filling

I’ll be honest, lemon pie is not usually my go-to choice of pie flavor. It would probably be towards the bottom of my preferences, but I did enjoy putting together a tart but sweet, creamy and delicious pie. The girls love their pies, but I was surprised that one of Rory’s favorites would be lemon! What flavor of pie would you order from Luke’s diner?
